Native to central Asia, alfalfa is one of the oldest cultivated plants in the world. It has traditionally been used for hay to feed animals, but has also been used for centuries as human food. Alfalfa has an extensive root system that allows it to absorb a high level of nutrients including vitamins A, B, C, D, E, K, niacin, pantothenic acid, biotin, and folic acid. Alfalfa is a body cleanser, infection fighter and natural deodorizer with antifungal and antibacterial properties. It helps the body assimilate protein, calcium, and other nutrients and is often used in weight gain programs because of its high protein and appetite stimulating properties. Alfalfa has also been used to help treat anemia, diabetes, nausea, and ulcers.

The seeds can be sprouted and used in salads. The leaves may be eaten raw or cooked. The powder is great for smoothies, over salads, in energy bars or raw dishes.
